Peanut Butter Oatmeal Cookies

About the Recipe

Soft and chewy with a slightly crunchy exterior, these vegan cookies are melt-in-your mouth delicious and offer a good dose of plant-based fiber from the oats and flaxseed.


  • 1/2 cup extra virgin coconut oil

  • 1/2 cup agave nectar

  • 1/4 cup maple syrup

  • 2 tsp vanilla extract

  • 2 tbsp ground flaxseed

  • 1/2 cup creamy peanut butter

  • 1 cup oats

  • 1 1/2 cups Compassionate Kitchen Biscuit Mix


Step 1

Pre-heat oven to 350. Cream together coconut oil, agave nectar, maple syrup, vanilla, peanut butter, and ground flaxseed. You can use a mixer or a fork works just fine as well.

Step 2

Fold in oats and Compassionate Kitchen Biscuit Mix.

Step 3

Roll dough into one-inch balls and place on parchment paper lined baking sheet.

Step 4

Flatten the cookie dough balls with a fork in a criss-cross pattern.

Step 5

Bake for 12 minutes and let cool completely on baking sheet before transfering.
