About the Recipe
There’s something timeless about a warm stack of pancakes -simple, comforting, and perfect for bringing everyone to the table. These pancakes are light, tender, and gently sweet, made with clean, plant-based ingredients that come together in minutes. They’re ideal for slow weekend mornings, quick weekday breakfasts, or anytime you’re craving something cozy and homemade.
This recipe uses our Mix to create classic pancakes with a soft, fluffy interior and golden edges. Customize them with blueberries, chocolate chips, or a pinch of cinnamon, and serve with fresh fruit and maple syrup for an easy, crowd-pleasing meal.

Ingredients
1 cup of Mix
2 tablespoons of oil or melted plant-based butter (can sub ground flax)
1 tsp of vanilla extract (optional)
1-2 tablespoons of sugar/maple syrup (optional)
3/4- 1 cup of plant-based milk or water
Preparation
Step 1
In a medium bowl, whisk together the Mix and sugar (if using).
Step 2
Add the oil or melted butter (or flax mixture*), vanilla, and milk. Stir until just combined. Do not overmix - a few small lumps are okay.
Tip:
Use more liquid for thinner, pancakes
Use less liquid (about ¾ cup) for thicker, fluffier pancakes
Step 3
Heat a lightly greased skillet or griddle over medium heat. Once hot, pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes, until golden.
Step 4
Serve warm with fruit, maple syrup, or your favorite toppings. Enjoy!
*Flax option: If using a flax in place of oil, you may need to add a little extra milk or water to reach your desired consistency.
