Ingredients

  • 1/2 cup of softened vegan oil (coconut or vegan butter)

  • 1/2 cup of white sugar

  • 1/2 cup of brown sugar

  • 2 tsps vanilla extract

  • 1/2 cup of plant-based milk

  • 2 1/2 cups of Biscuit & Baking Mix

  • 10 oz semi-sweet vegan chocolate chips

Preparation

Step 1

Preheat the oven to 350°F and line a cookie sheet with parchment paper.


Step 2

In a medium bowl, mix together the softened oil (vegan or coconut), white sugar, brown sugar, vanilla extract, and plant-based milk until well combined.


Step 3

Gradually stir in the Biscuit & Baking Mix, then fold in the chocolate chips until a soft dough forms.


Step 4

Roll the dough into 1-inch balls and place them on the lined cookie sheet. Gently flatten each ball with the palm of your hand for a classic round cookie shape.


Step 5

Bake for 12-17 minutes, until the edges are golden brown. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely before storing.
