Ingredients
Dough:
3 cups Instant Baking Mix
2 tablespoons sugar
1 cup water
1 teaspoon vanilla
Filling:
3 tablespoons melted coconut oil
1/4 cup sugar
2 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
Glaze (optional):
1 cup powdered sugar
1-2 tablespoons vegan milk
½ teaspoon vanilla extract
Preparation
Step 1
Preheat oven to 350 °F and line a baking sheet with parchment paper.
Step 2
Combine all the filling ingredients in a small bowl, mix well and set aside.
Step 3
Make the dough by combining the sugar, water, and vanilla. Then slowly fold in the Instant Baking Mix and mix until a soft ball of dough is formed.

Roll the dough into a 1/4-inch thick rectangle, about 12x16 inches. Evenly spread the filling over the surface, leaving a 1/4-inch border at the top.
Step 4
Starting from the bottom long edge, loosely roll the dough into a log. Pinch the top seam (the `1/4-inch border without filling) to seal it. Cut the log into 10-12, 1 1/2" wide pieces.
Step 5
Place the cinnamon rolls on the parchment lined baking sheet, leaving about 1" between them for expansion. Brush with the remaining filling mixture (optional). Bake at 350 °F for 30 minutes.
Step 6
Prepare the Glaze (optional):
While the rolls bake, whisk together the powdered sugar, vegan milk, and vanilla until smooth.
Step 7
Allow the cinnamon rolls to cool for 10-15 minutes before glazing. Enjoy!
