Ingredients


  • 1 cup vegan milk

  • 1 teaspoon apple cider vinegar

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon

  • 2 cups Instant Baking Mix

  • 1/2 cup white sugar

  • 1/2 - 1 cup fresh blueberries (or more depending on how berry you want them).


Preparation

Step 1

Preheat the oven to 375°F. Lightly oil a 12-cup muffin pan or line with paper liners. Set aside.


Step 2

In a large bowl, whisk together the vegan milk, apple cider vinegar, vanilla extract, and lemon zest and set aside.



Step 3

In a small bowl, combine the Instant Baking Mix and sugar, breaking up any clumps.


Step 4

Gradually stir Instant Mix and sugar into the wet ingredients. Be careful not to over-mix or they won't rise as good.



Step 5

Gently fold in the blueberries, then divide the batter evenly among the prepared muffin cups.


Step 6

Cook muffins on 375°F for 20-25 minutes, or until a toothpick or knife inserted into the center of a muffin comes out clean.


Step 7

Allow the muffins to cool in the pan for a few minutes, then take them out and let them cool completely before storing.
