Ingredients
1 1/3 cups of Everyday Baking Mix
1/3 cup of sugar (for a sweeter bread you can make this 2/3)
1 teaspoon vanilla extract
4 small or 3 overripe bananas
1/3 cup applesauce (if not on hand you can use plant-based milk)
1/4 cup plant-based milk (if needed)
Optional add ins:
1/2 cup chopped walnuts (pictured)
1/2 cup of chocolate chips
1 teaspoon cinnamon
Preparation
Step 1
Preheat oven to 350°F and lightly oil a loaf pan.
Step 2
In a medium mixing bowl, mash 3–4 ripe bananas. Add the applesauce (or plant-based milk) and vanilla extract and stir to combine. Slowly fold in the Mix and sugar, stirring just until incorporated—be careful not to overmix. The batter will be slightly thick and may have a few small lumps. If it feels too thick, gently stir in a splash of plant-based milk to loosen it.
Step 3
Pour batter into the prepared loaf pan and bake for 50 minutes to 1 hour - just until a toothpick comes out clean. Let rest for 10 minutes before serving.
